Wanted more bang for my salad buck in my Cobb Salad, so I subbed out the lettuce for darker greens because the darker leafty greens like spinach, kale and such come along with wonderful vitmans and minerals like vitamin K and Postassium. According to Texas A&M Extension's website, spinach has 2X the potassium, protein, calcium, iron, niacin to name a few. Check out my IG post for a Keto friendly high nutrient dense cobb salad.
